Raisin Sugar and Balsamic Vinegar Sauce over Shaved Melon

Serves six

Ingredients

1/2 cup large golden raisins
1/4 cup light bronw sugar
1/4 cup water
1 oz. good Balsamic vinegar
large Honeydew melon
mandolin or commercial meatslicer
toasted almond slices with skin on

Directions

1. Combine raisins, sugar and water.
2. Simmer this until all the sugar is dissovled and a light syrup look appears.
3. Add the vinegar and place the mixture in a small glass jar for at least 24 hours.
4. After cleaning melon for peel and seeds slice it super thin on your mandolin in long wide slices.
5. Toast the almonds in the oven to brown at 375 degrees.
6. Serve the melon in a bowl and spoon the Balsamic vinegar sauce over and sprinkle with the almonds.  Option:  may serve this over vanilla ice cream
